My Favorite Guacamole Recipe
I absolutely adore fresh guacamole. It's easily one of my all-time favorite foods, perhaps because I grew up surrounded by Mexican cuisine. Here is a simple recipe to enjoy.
Ingredients
3-4 ripe avocados
1 large tomato diced
1/2 red onion finely diced
1-2 cloves of garlic minced
2 limes juiced
Sea salt 1/2 teaspoon
Fresh cilantro, 3 tablespoons
Jalapeno pepper seeds removed and finely diced (optional if you prefer a little kick)
Directions
Slice the avocado in half and remove the pit. I like to mash a few and leave some chunky. Do what texture you like!
Add all the remaining ingredients and then slowly mix all ingredients into a medium-sized bowl.
Add in the salt and lime, and adjust to your taste.
Garnish the top with some extra cilantro.
Serve with tortilla chips or flax crackers.
Tips:
Find large avocados; if you can only find small ones, add an extra small.
Opt for fresh limes instead of bottled juice.
To maintain the vibrant green color of your guacamole:
Transfer the leftover guacamole into a storage container and smooth it out evenly with a spoon to create a flat surface.
Pour approximately 1/2 inch of cold water over the guacamole.
Seal the container with its lid and refrigerate.
When ready to eat, pour off the water, stir the guacamole, and it's ready to enjoy for another two days.
