Menstrual-Friendly Energy Balls
These energy balls make for a great snack that's low in sugar but high in protein. They can assist in balancing hormones and blood sugar levels during the menstrual cycle (days 15-28).
You can have one to two balls per day during your menstrual cycle. Store them in an airtight container in the fridge for up to 14 days or in the freezer for even longer.
Ingredients
1 cup unsalted natural almond or sunflower butter
1/4 cup ground flaxseed
2 to 3 pitted dates
1 tablespoon cacao powder
1/4 cup of protein powder
1/4 teaspoon ground cinnamon
Pinch of sea salt
1 teaspoon vanilla extract
2 tablespoons cacao nibs, optional
1/4 cup of toasted coconut flakes, optional
Directions
Add almond or sunflower butter, flaxseed, dates, cacao powder, protein powder, cinnamon, salt, and vanilla to a food processor and pulse until smooth.
Optional to mix in cacao nibs by hand.
Scoop out 1 teaspoon of the mixture at a time and roll it into a ball using your hands. If the mixture is too sticky, add 1 to 2 teaspoons of ground flaxseed to help it stay together better.
Roll each ball into a bowl of coconut flakes, if you like. Place the balls in the fridge to firm up for 30 minutes, and enjoy!
