Homemade Marshmallows

I’ve been experimenting with different marshmallow recipes and may have finally perfected one. These homemade marshmallow cubes are made with gut-supportive marshmallow root tea or powder, collagen, and gelatin. They’re a naturally sweet and fluffy treat without the processed sugars or additives.

Ingredients

  • 1 cup marshmallow root tea, cooled. If you prefer marshmallow root powder, remove it from its capsules, steep it in warm water, and strain it.

  • 3 tbsp high-quality gelatin

  • 1 tbsp collagen powder

  • ½ cup maple syrup OR honey (or a combo: ¼ cup of each)

  • 1 tsp vanilla extract

  • 1/8 tsp sea salt

  • Rose powder (for dusting on top, optional)


Directions

  1. Prepare the marshmallow root tea: If using marshmallow root powder, soak it in hot water for 15–20 minutes, then strain.

  2. Let the tea cool to room temperature before use.

  3. Bloom the gelatin: Pour the cooled tea into a mixing bowl. Sprinkle gelatin and collagen powder over the tea and let it bloom for about 5 minutes. It should absorb the liquid and create a gel-like consistency.

  4. Heat maple syrup (or honey) in a small saucepan over medium heat until it starts bubbling for 2–3 minutes. Stir in the vanilla extract and sea salt.

  5. Slowly pour the hot sweetener into the bloomed gelatin using a stand or hand mixer while mixing on low. Once combined, increase speed to high and whip for 10–15 minutes until the mixture turns light, fluffy, and glossy.

  6. Pour the marshmallow mixture into a greased or parchment-lined glass baking dish. Optionally, smooth the top and sprinkle rose powder evenly over the surface. Refrigerate for at least 4 hours or until firm.

  7. Once set, cut into cubes with a greased knife. Store in an airtight container in the fridge for up to a week.
