GF Banana Maple Nut Pancakes

Whip up this scrumptious and protein-packed breakfast! These gluten-free pancakes are a real crowd-pleaser for the whole family. They also keep things sweet without any refined sugars. You can either prep them ahead as part of your meal plan or turn it into family cooking fun.

I personally go for Go Good whey protein but feel free to go with your favorite protein powder. I love the amino acid profile and the fact that Go Good uses such clean ingredients.

Ingredients:

  • 1-2 scoops vanilla protein powder

  • 2 eggs

  • ½ ripe banana, mashed

  • 1 pinch of sea salt

  • 1 ½ cups (150 g) non-gmo certified gluten-free rolled oats

  • ¼ cup unsweetened almond milk or any milk at room temperature

  • 2 teaspoons of baking powder

  • 2 tablespoons chopped walnuts or sunflower seeds

  • 1 tablespoon coconut oil or butter

  • Maple syrup, to taste

Directions

  1. In a blender or food processor, place the eggs, milk, bananas, then the oats, protein powder, baking powder, salt, and vanilla, and blend or process until as smooth as possible.

  2. Pour mixture into a bowl and fold in walnuts.

  3. Add oil or butter to a small skillet over medium heat. When hot, add ¼ cup of batter. Cook on one side until bubbles have risen to the top. Flip carefully, then cook on the other side until golden brown. Repeat with the remaining batter.

  4. Serve topped with maple syrup, and enjoy.
